I never thought in a million years I’d EVER be discussing my weight on my blog. Oh well, blog for a year and you tend to forget that people are strangers…they feel more like friends! Plus, when you have as much weight to lose as I do, a 7 pound weight loss just doesn’t seem like much. BUT…when you factor in that it was done in ONE WEEK!?!?! I was so excited this morning when I stepped on the scales because I realized that is 7 pounds I never have to see on my body again.
TO be honest, the only thing I did this past week was cut out sugar (except for those cookies and cupcakes I ate last night at 11:30 at my MIL’s – thanks Linda – HIDE THOSE THINGS NEXT TIME!!!) and drink more water. I have a tendon or something in my foot that is preventing me from walking long distances, so I haven’t been very faithful to exercise. BUT – I am recommitting, NOT quitting!

Here is one of my most requested appetizer recipes. It originally came from “Taste of Home” magazine, but I have tweaked it a little over the years.
Sesame Chicken Bites
Ingredients: 1/2 c dry bread crumbs 1/4 c sesame seeds 2 t minced fresh parsley 1/2 c mayonnaise 1 t onion powder 1 t ground mustard 1/4-1/2 t pepper 1 lb boneless skinless chicked breasts, cut into 1-in. cubes vegetable oil
-In a large ziploc bag, combine first 3 ingredients and set aside. -In a small bowl, combine mayo, onion powder, mustard, and pepper. -Coat chicken in mayo mixture, then add to crumb mixture a few pieces at a time and shake to coat. -In a large skillet, saute chicken in oil in batches until juices run clear (med/hi heat) Add oil as needed.
*Serve with honey-mustard sauce: 3/4 c mayo 1 1/2 t dijon mustard 4 1/2 t honey

I have the hardest time finding jeans that fit. I hate the fact that my husband can walk into any store, tell someone he needs a “34-34” (yes, he’s square) and then walk out without ever trying them on. In, like, 5 minutes, people. It takes me an hour at least to find JUST. ONE. PAIR. So…here’s what I found that might help out.

People who know me (in real life) know that I have some weight issues. I’ve gotten to the point where I tell jokes about myself to put people at ease (which really does the opposite, I know). It’s just that I want people to know that “I know” I am fat. There it’s said. I know it and now it’s time I do something about it.
I am tall at 5’11-3/4″ and I can still hear the words of my high school basketball coach, Alice Witte, telling me, “Karen, it’s so easy for you now, but if you ever stop exercising…you’ll gain weight. And the older you get, the HARDER it is to take off.” I remember rolling my eyes at the mere thought of ever being heavier than my 148 lbs of graduation. I wish I had listened to Alice….because I have more rolling on me now than just my eyes. (see how I just slipped that in there?)
So, here it is…I need to lose 100 lbs during this next year. It will probably take me longer, but I figure I’ll set the goal for a year. For the challenge itself, I think 30 lbs is do-able.
